Ingredients
- 1.5 kilograms of chicken thighs
- 300 grams of green beans
- 300 grams red potatoes cut into dices
- 4 cloves of minced garlic
- 5 tablespoons olive oil
- juice of one lemon
- salt
- pepper
Method
- Preheat oven to 200°C.
- Face a large baking dish with one tablespoon of olive oil.
- Mix together the lemon juice with remaining 4 tablespoons of olive oil, garlic, salt and pepper in a large bowl.
- Add the green beans and toss to coat.
- Remove the green beans with a slotted spoon and place them in the dish.
- Add the potatoes to the same lemon mixture and toss to coat.
- Arrange the potatoes using a slotted spoon along the inside edge of the dish on top of the green beans.
- Place the chicken thighs in the same bowl with the lemon mixture and coat thoroughly.
- Put the chicken in the dish.
- Cast the remaining lemon mixture over the chicken.
- Roast for about 45 minutes.
- Remove the chicken from the dish.
- Take the beans and potatoes back to the oven for 10 minutes until the potatoes are tender and golden.
- Place a chicken thighs and potatoes onto a platter with the green beans.
- Serve warm and enjoy.
